Every Friday, we feature a one-on-one Q&A with Japas, our resident curators: Maíra Kimura, Yumi Shimada, and Fernanda Ueno—founders of Japas Cervejaria. They will share their personal reflections on culture, travel, and the everyday moments including their connection to Japan.

Q: Was there a meal that changed the way you think about food in Japan?
Maíra: Yes, I went to a fancy restaurant called View & Dining The Sky with my family. We were invited by longtime Japanese friends, and it was by far the best all-you-can-eat experience I’ve ever had. The menu offered a wide variety of high-quality dishes, from different types of sushi and Kobe beef to tempura and other delicacies. One standout dessert was matcha cake with sakura ice cream.
Yumi: Breakfast completely changed my perspective. It’s almost like a lunch or dinner, complete, nutritious, and delicious.
Fernanda: One meal that really surprised me was at Ichiran in Shibuya. It wasn’t about fancy ingredients or a special occasion, but the way the experience was designed, sitting alone, fully focused on the ramen. It made me pay attention to every detail. The broth was rich and balanced, the noodles had the perfect texture, and the whole atmosphere felt intentional and almost calming. It made me see how even something quick and accessible can be deeply satisfying when it’s done with care.
